Regardless of whether we go to work by car, bicycle, public transport or go to the room and sit in front of the computer, we need a decent breakfast. Breakfast is not only a requirement of nutritionists, but also a pleasant start to the day and a boost of energy.

Breakfast on the run

Many people attribute the lack of breakfast to lack of time. Meanwhile, you can prepare a great breakfast the day before. Example?

Night porridge

Composition:

  • 2 tablespoons oatmeal
  • 1 teaspoon of flaxseed
  • Delicacies and nuts
  • Milk/yogurt

Place 2 tablespoons of oatmeal, 1 teaspoon of flaxseed, your favorite dried fruits and nuts in a jar (jars with leftover jam, nutella, or nut butter work best). Pour boiling water so that it is about 3 cm above the ingredients. We close the jar and leave it on the table until the morning. In the morning, add milk/yogurt/a teaspoon of jam or peanut butter to it. Mix and enjoy a delicious breakfast. Some cereals are immediately poured with kefir or milk - this is a good option for those whose digestive system is not sensitive to the morning dose of lactose.

Another breakfast that we can prepare the day before is pancakes. We fry our favorite pancakes, trying to make them a little larger. In the morning we put them in the toaster and bake - the taste is excellent. Tip for experienced people: pancakes can be frozen and then put into a toaster straight from the freezer.

How to cook pancakes?

Composition:

  • 1 cup plain flour
  • Soda
  • Baking powder
  • Vanilla sugar
  • 2 eggs
  • 1¾ cups buttermilk
  • 50 g butter

 Mix 1 1/2 cups of wheat flour with 2 teaspoons of baking powder and 1/4 teaspoon of baking soda. Add 1 tablespoon of vanilla sugar. In a separate bowl, whisk together 2 eggs, 1 3/4 cups buttermilk and 50g melted and chilled butter. We combine the contents of both bowls, but do not make a homogeneous dough - just mix the ingredients so that they are combined. Fry in a dry frying pan for 2 minutes on both sides.

How to freeze them? It's best to place baking paper on a shelf in the freezer and arrange pancakes next to each other on top of it. Once frozen, place them in a bag.

Eggs baked in sauce? Of course! Even shakshuka can be sped up and the sauce prepared the day before, and in the morning just reheat and fry the eggs. What is the easiest way to do this?

Quick "shakshouka"

Composition:

  • 2 eggs
  • 2 cloves of garlic
  • 1 can of chopped tomatoes
  • ½ sweet pepper
  • elastic
  • ground chili pepper
  • Ground coriander
  • cinnamon
  • parmesan cheese for serving

 Fry finely chopped onion in a pan until soft. Add 2 crushed garlic cloves, 1 1/2 teaspoons cumin, 1 teaspoon ground coriander, 1 teaspoon cinnamon, and 1/2 teaspoon salt. Saute for 30 seconds, add 1/2 diced pepper and 1 can of diced tomatoes. Bring to a boil and fry over low heat for 5 minutes. Season with salt to taste. In the morning, heat half the sauce in a pan, add 2 eggs and fry over low heat for about 5 minutes (the whites should curdle). Serve with chopped coriander. If you like spicy flavors, you can add 1/2 teaspoon of chili pepper to the tomatoes. We can leave the rest of the sauce in the fridge and use it within 5 days (you can add it to pasta and make a quick dinner by sprinkling it with freshly grated parmesan cheese before serving).

Another simple and delicious breakfast on the go is scrambled eggs with avocado and peanuts. Sounds trite, and it's true - cooked in the blink of an eye, and tastes like breakfast from the best dining room. Fry eggs in butter, sprinkle with salt and pepper. Ripe (very important!) avocado cut in half and put on a plate, lightly sprinkle with lime juice and sprinkle with chopped peanuts. Best served with a fresh bagel or croissant. We can give him a piece of smoked salmon and feel like we're having a little Sunday morning.

Eggs for breakfast are a classic. It can be presented in many forms - as scrambled eggs, scrambled eggs, soft, Viennese style, T-shirt. How to cook fantastic scrambled eggs? Cooking scrambled eggs is one of the biggest culinary challenges, because everyone has their own version of the ideal - someone likes fluffy scrambled eggs, in which the whites are like fluff, others like well-cut eggs that resemble dry matter, someone likes loose protein and a barely chopped yolk. In one of the hotels, the secret ingredient in scrambled eggs is 36% cream.

Perfect scrambled eggs

Composition:

  • 2 eggs
  • 4 tbsp cream / XNUMX/XNUMX cups of milk
  • a spoonful of butter

A pinch of salt and 4 tablespoons of cream are added to two eggs (milk is omitted). Everything is beaten well with a fork, and then fried in melted butter. Before serving, a small piece of butter is placed on a hot omelet, which melts on it and adds flavor, sprinkle with flower salt (fleur de sel) and freshly ground pepper.

For those who prefer slightly lighter flavors, fluffy scrambled eggs with milk are perfect. Place 2 eggs in a glass, add 1/4 cup milk and beat with a fork with a pinch of salt for about 90 seconds. Then fry in melted butter, stirring constantly.

Viennese eggs

These are eggs boiled in a glass or jar (remember that the glass must be heat-resistant). Break 2 eggs into a heated glass, add a piece of butter and sprinkle with salt. Put them in a flat pot of boiling water so that the water reaches half the glass / frame. Cook until egg whites are set, 3 to 5 minutes. Viennese eggs are delicious with herb butter (add chopped watercress, parsley or basil, a pinch of salt to the butter and stir).

My kids love "weekend" eggs. We call them that because we only have time to cook them on weekends. How to make them?

  • 2 eggs
  • piece of salmon/ham
  • 1 tablespoon cream 36%
  • Green onion / dill

 Preparation is simple - you just need patience in anticipation of the results of the work. These are eggs baked in frames with smoked salmon or ham. How to prepare them? Preheat the oven to 200 degrees Celsius. Lubricate the molds with butter. Put a piece of salmon or a slice of ham on the bottom. Beat in 2 eggs, being careful not to break the yolk. Pour 1 tablespoon of 36% cream on top. Bake for 12-15 minutes (the edge of the egg will be hard baked, and the middle slightly jelly-like; after we take the protein out of the oven, the protein will “crawl through”). Remove from oven, sprinkle with scallions or dill (or leave it out if the kids don't like it).

Salmon eggs can be served with lemon buttered toasts (2 tablespoons of soft butter mixed with a little lemon zest) and ham eggs are good with garlic buttered toasts (4 tablespoons of soft butter mixed with 1 squeezed clove of garlic and a pinch salt).

Healthy breakfasts for kids

Children love colorful breakfasts and familiar flavors. Sometimes they despise certain vegetables, they wrinkle their nose at the sight of millet or oatmeal, they have favorite dishes. One of the most important lessons that the Szkoła na Widelcu Foundation has taught me is to put a plate full of colorful vegetables on the table with every meal. There is no need to force children to reach for vegetables if we do it ourselves. It is important that the plate has different cuts - cucumbers, carrots, peppers, kohlrabi, radishes, tomatoes. Before serving the dish to children, let's try to serve vegetables.

How about breakfast? The best breakfasts of course Pancakes (for which the recipe for this breakfast can be found in the previous paragraphs). They can be served with peanut butter, natural yogurt, apples or pears boiled in a little water.

iPorridge with blueberries this is also a good idea. Pour 3 tablespoons of oatmeal with water so that it covers them 1/2 cm above the flakes, bring to a boil. Serve with milk or natural yoghurt and fruit.

Great way to have breakfast jaika fried fried in a slice of pepper (just cut the pepper across, put a piece of paprika in the pan and add the egg to the pan and fry as usual). Instead of paprika, we can use a special mold for this. The kids love it too boiled eggs - if we are afraid to pour with one hand and twist with the other, we can take a shorter path and use a special form for poached eggs. Just put an egg in this mold and pour some water into the pan to get a great egg.

Austrian omelettes called kaiserschmarrn are also very tasty.

Omelets Kaiserschmarn

Composition:

  • 3 eggs
  • 4 tablespoons butter
  • 1 tablespoon vanilla sugar
  • 1 cup flour
  • 1/3 raisins (optional)
  • Powdered sugar/apple mousse for serving

Beat 3 egg whites until foamy, set aside. In a bowl, beat 3 yolks, a pinch of salt, 3 tablespoons of melted butter, 1 tablespoon of vanilla sugar. Slowly add flour (1 cup) and milk (1 cup). Whisk until the ingredients combine. Using a spoon, add the egg whites and gently mix the whole mass. Heat 1 tablespoon of butter in a frying pan. Pour in the omelet and fry over medium heat (if the kids like it, add 1/3 cup raisins).

After about 5 minutes, check if the omelette is browned on the bottom and notched on top. Sprinkle with 1 teaspoon of sugar. Turn the cake over and sprinkle it with another teaspoon of sugar. Use a spatula or two forks to break the omelette into small pieces. Add 1 tablespoon of sugar to the pan and, gently flipping the omelette pieces, fry for another 2 minutes until the sugar caramelizes.

Serve sprinkled with icing sugar and applesauce.

When preparing breakfast for children, it is worth remembering that one of the ingredients is wholemeal flour (bread, pancake, pie, tortilla), a little protein product (cheese, sausage, egg pate, egg, scrambled eggs) and some vegetables. Children love colors, but they don't always want to experiment. There is nothing wrong with this - it is important that we eat all day, and not just in the morning.

Sugar-filled breakfast cereals don't have to be forgotten, but they should be limited - maybe you can have them for breakfast on a day when it's extremely hard to get up or on a day off. Instead, we offer children natural rice or corn porridge, on which we cut banana or apple slices. If it is really difficult for us to cook something good in the morning, let's try to do it in the evening - our body will thank us.
