Dessert already, or what to serve to uninvited guests

In my family home, in a locked cupboard, there was always a crystal bowl filled with various sweets - my mother kept it in case of intruders. In times of phone calls and surprise visits, can quick dessert recipes come in handy?

With almost everyone announcing their arrival, quick desserts have completely changed the context in which they appear. Today they are motivated not by guests, but by children and ourselves. Friday nights have an extraordinary magic to induce a desire for something sweet, perhaps a subconscious form of reward for a job well done. So we're trying to come up with something that's acceptable for kids as sweet and for us as something healthy.

Everyone wants to make healthy sweets, but not everyone wants to eat them. There is one thing in our family that is completely outside the scope of a healthy snack, but everyone loves it - waffles with toffee and jam. I can't describe the magic of waffles, but maybe it's just a wonderful combination of sweetness and a very delicate crunch. We shift waffles with canned kaimak, alternating with homemade jam or blackcurrant jam. Let's use our new find - a spatula for decorating cakes, thanks to which jams spread perfectly without damaging the surface of the waffle. We recently used peanut butter, almond butter, and raspberry jam instead of toffee. We use leftover toffee to make the world's easiest and most decadent dessert in a quick version - Banoffe. Mix toffee with mascarpone in a ratio of 1:1. Crush 1 digestive biscuit in the bottom of a cup, add a tablespoon of mascarpone toffee and garnish with banana slices. This dessert takes less than 5 minutes to prepare.

Our dentist taught us how to make a dessert that no dentist would forbid. Cut a few apples into pieces, fill them with water, sprinkle with cardamom and cinnamon. Simmer covered until slightly softened. Serve with 1 tablespoon thick natural yogurt and chopped pistachios. Hot apples are healthy version of apple pie, which in a more decadent version can be served on oatmeal cookies. It is only important to do it carefully - the glass should be wide and clean, and the layers should be clearly visible. The same dentist taught our children to eat rye bread with thinly sliced ​​apple sprinkled with cinnamon, which became a healthy and acceptable dessert for them.

Chocolate saves every situation. Chocolate loves raspberries and loves again. This passion can be used in several ways. The simplest of them brownie with raspberries – Dissolve 2 dark chocolate bars in a bain-marie with 1 cube of butter. In the cooled mass, add ½ cup sugar, 1 cup flour and 6 eggs. We mix before combining. Pour onto a baking sheet, put 1 cup of raspberries on top and bake for about 30 minutes at 180 degrees. A deluxe version of the brownie is baked without raspberries, but served with hot raspberries - Put the fruits in a saucepan, cover with a little water and simmer, covered, for 3 minutes, until they release juice and fall apart. Another raspberry dessert is whipped cream with raspberries and melted chocolate. It is enough to put raspberries on the bottom of the glass, put whipped cream with powdered sugar on top and pour melted chocolate. Homemade Chocolate Pudding with raspberries is also a very quick dessert. Mix two cups of milk with 3 tablespoons of cocoa, 3 tablespoons of sugar and 2 tablespoons of potato flour. Add a pinch of cinnamon. Pour the mixture into a saucepan and, stirring constantly, bring to a boil. Put raspberries on the bottom of salad bowls and pour pudding over. On top of each pudding, you can put a cube of milk chocolate, which melts wonderfully.

tiramisu, Italian classics can also save us when unexpected guests are on the doorstep. In the simplest version, we break the Italian cookies and put them on the bottom of the glasses, carefully pour the mixture of coffee and amaretto. Add mascarpone mixed with powdered sugar and yolks (safe option without yolks). Spread the mascarpone over the cookies, sprinkle with cocoa powder and serve.

Desserts we like to categorize as innocent snacks cocktails and smoothies. Usually all mixes of fruit with juice or fruit and milk in Polish were simply called cocktails, but since the cocktails were added by bartenders, the language situation has changed a bit. Today, we seem to like calling them "smoothies" more. Soft fruit, yogurt, milk or juice are great smoothie bases. Cocktails are a godsend for strawberries, raspberries, blueberries, blueberries, bananas, apples, pears and plums, a little tired of life. In a cocktail, they should not seduce with flawlessly shiny and even skin. Basically, you can put any fruit you like into the blender. Our kids favorite version includes mango, banana, cardamom and natural yogurt. Adult favorites include apple juice, spinach (a handful for two cups), lemon juice, 1 tablespoon flaxseed, and a banana. Flaxseed makes the smoothie deliciously filling and takes care of our stomach. Perhaps due to the presence of fruit, we like to treat cocktails as innocent snacks, but these are sweet desserts to the fullest. Especially when served in a tall glass with a long spoon and an organic straw made from thick paste or paper.

Quick desserts are nothing more than creative cooking, finding new solutions for leftovers, and figuring out how to take shortcuts. If we serve them in beautiful glasses or salad bowls, no one will guess that they came out of our hands just a moment before serving. It is worth having a bowl of chocolates or nuts hidden on a barely visible shelf - it can come in handy when you least expect it.
