How to deep fry properly?

Deep frying is one cooking method that many of us secretly love but don't openly admit it to. I don't know anyone who doesn't want to munch on salty fries in the middle of the night or eat some decent fish and chips at least once in their life. How to deep fry and what good can be cooked?

What is Deep Frying?

Deep frying is nothing more than immersing ingredients in oil, the temperature of which ranges from 180-190 degrees Celsius. When in contact with oil at high temperatures, the surface of the vegetable or meat caramelizes and closes, allowing the filling to suffocate gently. You probably know this feeling - something crunches in your mouth, and inside is wonderfully juicy and soft. Here's how frying works at the right temperature. Too low a temperature causes vegetables and meat to soak in fat, become a little mushy and greasy. Too high a temperature causes everything to become either dry, or burnt, or parched on the outside and damp inside.

How to use the fryer?

Please read the instructions carefully before using your fryer. Some models require a slightly different workflow than others. Manufacturers also often suggest which oil is best to use. However, if we have a used fryer or we got a version without instructions as a gift, let's start with buying oil.

The frying oil must have a high smoke point, i.e. it must start burning at high temperatures. Therefore, we do not fill the fryer with extra virgin olive oil or linseed oil. Canola oil works best. However, we must remember that most eateries use frying, i. a ready-made mixture of oils, often partially cured. Why? Because fry can be cooled and used again several times. Surely each of us smelled the old fat spreading over the seaside fryers - it's just frying fat that has been used for too long. At home it is better to choose something else. Another option for frying is the rather neutral-tasting peanut butter, popular in France.

Some deep fryers are equipped with a control light that shows how hot the oil is and what you can fry in it - we fry fries at a different temperature, and fish at a different temperature. After frying, it is worth giving our products some time to drain the remnants of fat - usually a special handle in the fryer is used for this, which allows you to hang the basket. If the oil is not burnt and there is no food leftovers in it, we can use it again.

How to deep fry chicken?

Breading is often the secret to fatty dishes. It can be a simple breading of flour, eggs and breadcrumbs. However, we can invest in a panko coating that is thicker and provides more of a crunchy effect.

Before frying, chicken pieces - breasts, thighs, wings, should be salted, sprinkled with pepper and sweet paprika. If you like very juicy chicken, I highly recommend dipping the chicken pieces in buttermilk, salt, and bell pepper for at least an hour before frying.

Whether we deep-fry the chicken, shallow-fat it or bake it, this buttermilk bath will make it super juicy. Remove the pieces of meat from the buttermilk and dispose of any leftovers. Dip it in flour so that the meat is really whole in flour (due to this, the breading will hold better), then dip in a beaten egg so that it simply envelops the flour (remove the remaining egg with your fingers). Then roll the breaded pieces of meat so that the breading completely covers all the nooks and crannies of the meat. Fry at the temperature set by the deep fryer until golden brown.

How to deep fry vegetables and fish?

Panko breadcrumbs are a good way to fry not only chicken and meat, but also vegetables and fish. It is better to cut the fish into small pieces. It is also good to get rid of the bones, although some of them do not interfere with the taste of the dish.

For fish and chips, we will buy a decent cod, lightly salt it and cook it. We do exactly the same as with chicken. In the same way, you can process onion rings, and squid, and shrimp (leaving them only a non-breaded stalk), pieces of mozzarella (the middle stretches deliciously, and everything is crunchy on the outside and does not require spices at all). We can also prepare and roast cauliflower florets, broccoli, zucchini and eggplant slices.

Breaded and deep fried pickles served as an appetizer with mayonnaise and mustard sauce made a sensation in the United States for a time. Americans also love deep-fried dumplings. Dip the dumplings off the baking sheet in the egg or buttermilk and breadcrumbs. Deep fry until golden brown and serve with marinara sauce.

How to prepare deep-fried dessert?

The deep fryer is heaven for churros lovers. How to fry churros in a deep fryer? We need:

  • 250 ml of water
  • 100 g soft butter
  • 200 g wheat flour
  • 5 eggs

We mix everything until a homogeneous mass is obtained. We put it into the pastry sleeve with the end of M1 (whistle). Squeeze directly onto the hot fat, cutting off as much dough as you like with scissors. Fry until golden brown. While still hot, sprinkle generously with sugar and cinnamon.

If we like American tastes, we will definitely like the funnel cake. The recipe is extremely simple, because this is a recipe for pancakes. We will need:

  • 1 cup flour
  • 1 tablespoon baking powder
  • 1 egg
  • 1 cup buttermilk
  • 1 teaspoon vanilla sugar
  • 40 g melted butter

We combine everything and pour it into a plastic confectionery bottle or bag without a tip. Pour into deep-fryer, creating a flourish, and fry for 2-3 minutes until golden brown. Remove carefully so as not to tear the dough. Serve with powdered sugar, strawberry jam, whatever your heart desires.
