How does speech recognition technology work?

When we watch old sci-fi movies like 2001: A Space Odyssey, we see people talking to machines and computers with their voices. Since the creation of Kubrick's work, we have witnessed the rampant development and popularization of computers around the world, and yet, in fact, we have not been able to communicate with the machine as freely as the astronauts aboard Discovery 1 with HAL.

Much more than the creation of many other communication interfaces with computers, from perforated tapes, magnetic tapes, keyboards, touch pads, and even body language and gestures in Kinect.
