Who is one of the most beloved chefs in Poland? What was his path to another wave of popularity - this time on YouTube.

Cooking, tasting and discovering

When Robert Maklovich's television program disappeared, many wondered what really happened. Everyone is used to a cooking program in which the host talks about the ingredients, history and interesting characters with open curiosity and passion. The fast-paced narration was somewhat reminiscent of a baroque piece - unique adjectives and similes, many sentences, impeccable grammar and diction, so characteristic. It was believed that he returned to work in gastronomy. Probably few people know that their favorite host is not a chef, although he did a lot for gastronomy.

Robert Maklovich studied law and history at the Jagiellonian University. Apparently, he once treated a friend to a first-class Wiener schnitzel. He enriched the tasting with a unique story - not only about the history of the schnitzel itself, but also about the influence of Zaborov and pig farming in the People's Republic of Poland on the Poles' great love for pork chops. He was offered to write food reviews for the "Newspaper" in Krakow. Later he also wrote for Przekrój, Wprost and Newsweek. Many publications were created in collaboration with a wonderful person - Piotr Bikont, whom some may remember from his appearances on television (remember the two guards in the hospital in the movie “Leydis”? They are friends Robert Maklovich and Piotr Bikont) or the famous culinary festival Europa na Widelcu, organized by in Wroclaw.

It's safe to say that the Bikont Maklovich duo was the forerunner of the fashion for food, tasting, public cooking, tasting and discovery. Europa na Widelcu has never been a food fair - it was a real festival with the participation of government institutions, libraries, museums, workshops, meetings, themed dinners, and guests were invited not only from the world of cooking, but also from the world of art. The festival showed that the most important thing in food is people, community, joy, fun and openness. Maklovich and Bikont wrote several seminal books together: A Table with Broken Legs (an excellent column on the frontier - which half of the scroll is better) and Dialogues of Tongue with Heaven (a masterpiece of culinary epistolography). .

What made Maklovich's program different from other programs was his curiosity and respect for other people and their cultures. The recipes themselves were important, but never obscured the cultural-human aspect. One way or another, all the viewers were waiting for “did you know that” or “I have such an anecdote here.” Probably, most of the viewers watched the program for the host and his great erudition, and not for dishes. It was thanks to Robert Maklovich that the Poles discovered Dalmatia. He dedicated a book to her.

When someone goes on vacation to relax, Maklovich travels to discover. Dalmatia is a land full of sun, blue water, beautiful beaches and extraordinary cuisine. Since many compatriots use his charms, why has no one dedicated a book to him? The author, with his innate erudition, encourages readers to bring Croatian flavors to Polish homes: he understands that some ingredients will be difficult to obtain, so he suggests substitutes. For those who are not familiar with Dalmatia, he has prepared a glossary, thanks to which you can try certain dishes that he recommends.

We all remember the power of Austria-Hungary from our history lessons. How did you eat during the heyday of the Habsburgs? What is left of their legacy? In his book Ck Kuchnia, the author combines historical columns with recipes that today are the culinary heritage of Hungary, the Czech Republic, Romania, Austria, Bosnia, Slovakia and northern Italy. Some of the columns are an attempt to reconstruct events on the basis of read pre-war newspapers and notes. In the book, we will not find crooked pictures of candy-like dishes, but beautiful watercolors. Some may be confused by the lack of photographs and the overly long narrative, but that is what makes this book and its author unique.

Recently, Robert Maklovich is a YouTube star, the hero of memes and Tik-Tok videos. This shouldn't come as much of a surprise - she's a character you can't help but love. The way we enjoy marinated Swedish herring, comparing it to the best ripened cheeses, is absolutely masterful. Just as beautiful is the sound of your salivary glands when you cut off pieces of food to taste them. In addition, only he can speak so captivatingly and emotionally.
